6/12 Foodie Friday

Today I am going to share an easy fruit salad. This side salad is sure to brighten up your plate. It makes a great accompaniment to a lean serving of meat, fish or poultry and vegetables.

Tropical Ambrosia Salad

  • Prep Time: 10 min
  • Total Time: 25 min
  • Makes: 8 servings, 1/2 cup each

Ingredients

  • 2 cups miniature marshmallows
  • 1 can (8 oz.) pineapple chunks, drained
  • 1 banana, sliced
  • 1 large orange, peeled and sectioned (about 1 cup)
  • 1/2 cup sour cream
  • 1 cup toasted coconut

Preparation

  • Mix all ingredients except coconut in bowl.
  • Refrigerate at least 15 minutes.
  • Stir in coconut just before serving

  12. We make this but our coconut is not toasted -- and we have no banana -- a good fruit salad and so easy to put together. I'm not sure what our name is but it isn't Tropical Ambrosia -- oh, I remember -- it's 5 cup! (Because each ingredient is a cup!) Good salad -- good choice for Foodie Friday.

  19. Susan this is a lovely old-fashioned salad. When the oldies were good they were great and your recipe falls into the great category. We use to have this on the groaning board for all our family holidays. I had forgotten about it - thanks so much for the reminder.

    I do make pansit and lumpias shanghai (the tiny ones), but since dh had to be out of town, I'll have to wait on making lumpias until Monday as I don't have any wrappers. But this recipe link is very close to mine, so come check it out.

    I will make pansit tonight in honor of my country's independence Day. I've never written down the recipe, so I will tonight and send you a copy.
